Ingredients list for theBaked Chicken Foil Packs Recipe
- 2 medium skinless, boneless,chicken breasts, sliced horizontally
- 2 tablespoons vegetable brothorchicken broth
- 1 1/2 tablespoon fresh lemon juice, or to taste
- 1 tablespoon of your favorite hot sauce (we used Sriracha)
- 4 teaspoons minced garlic (4 cloves)
- Salt and freshground black pepper, to taste
- 3-4 tablespoons butter, diced into small cubes (or ghee)
- 2 tablespoons fresh chopped parsley or cilantro
- 1 lb (450g) medium-thick asparagus, woody ends trimmed

Directions
1.To prepare the oven-baked chicken in foil packs: Preheat your oven to 425ºF (220ºC). Cut 2 sheets of 14 by 12-inch (35 x 30 cm) heavy-duty aluminum foil then lay each piece separately on the countertop. In a small bowl, combine the ingredients forthe base of the sauce: broth,lemon juice, and hot sauce.
2.Season both sides and the inside of the chicken breasts with salt and pepper and divide chicken onto the aluminum foil near the center then place trimmed asparagus to one side of the chicken, following the long direction of the foil.
3.You can adjust the seasoning of the chicken breasts with more salt and pepper, then sprinkle garlic on top. Drizzle the sauce generously over thechicken breasts and asparagus.
4. Divide butter pieces evenly among the foil packets, layering them over the chicken breasts and asparagus.
5. Wrap the chicken foil packets in and crimp edges together then wrap ends up. Don’t wrap too tight so as to keep a little extra space inside for steam to circulate.
6. Transfer the chicken foil packs to a baking sheet and bake chicken in the oven, sealed side upward until chicken has cooked through, about 20 – 25 minutes, depending on the size of the chicken breasts and your oven.
7. Carefully unwrap the bakedchicken in foil packets then drizzle with more lemon juice and garnish with fresh parsley or cilantro and a slice of lemon. Enjoy!❤️

Tips for the baked chicken foil packets recipe
- Just double up the ingredients to make more chicken foil packets!
- Feel free to add more hot sauce if you like your chicken spicier. Same for butter: if you like more delicious buttery sauce, adjust to your taste.
- If your asparagus is thick, it can take longer to cook. You can blanch the asparagus first in boiling water for a few minutes before draining and baking in the foil packs with chicken.
- If aluminum foil is a concern, you can use parchment paper to make the chicken foil packets. Another way to do it is to line the foil with parchment paper, the foil will ensure the chicken packet is well sealed, and you can even throw it on the bbq!
- You can adapt this baked chicken in foil recipe to the Mediterranean Diet by replacing butter with olive oil.
What to serve with the baked chicken in foil?
If you’re extra hungry, you can always add a side of cauliflower rice or roasted vegetables. If you’re not on a keto or low-carb diet, a good slice of country bread will soak up the delicious cooking juices of this easy baked chicken in foil.

You can keep the baked chicken in foil leftovers for up to 3 days in an airtight container (don’t keep it into the foil)
Can we use other cuts of chicken?
This recipe uses skinless, boneless chicken breasts, but you could also use boneless, skinless chicken thighs. The chicken thighs may be smaller than the chicken breast, so you can add 1-2 per foil packet.
How to cook the chicken foil packets on the grill?
To cook these chicken foil packets on the grill, place the foil packets on the hot grill and cook for about 25 minutes, until the chicken is cooked through and the asparagus is tender.
